Big Bowl Potstickers

Chicken Potstickers or Jiaozi, its Chinese name, are the number one appetizer at Big Bowl. When we first opened they were handmade in the restaurant by Enrique Medina. Enrique is now helping with Wow Bao, another popular Lettuce restaurant. Today, our potstickers and dumplings are custom made for us in Brooklyn on modern robotic machinery capable of producing 180,000 potstickers in just a few hours. Although we have streamlined the production from the early days of Big Bowl we have taken a step back this year and begun making our chicken potstickers using Freebird All Natural Chicken. Freebird chickens are humanely raised on local family farms without hormones or antibiotics. They are free to roam the barn and are fed an all natural vegetarian diet of corn and soybeans. More importantly, they taste better than ever. Enjoy them steamed (my favorite) or pan seared and served with Chinese soy ginger dip sauce, sweet and sour plum, and homemade sesame mustard sauce.
