Purple Asparagus?
If you have never seen purple asparagus before, don’t worry. It’s not that common.
Available at all Chicago Big Bowls, Purple Passion is grown and delivered by Mick Klug of Klug Farms in Berrien Spring, Michigan. Purple asparagus is sweeter, more tender, and milder in flavor than the common green variety. Aside from its unusual color, purple asparagus tastes sweeter than its green cousin because it’s higher in sugar. What makes them purple? Cancer fighting anthocyanins. Apart from its sweeter taste and tender texture, asparagus is well known for its medicinal qualities. It’s high in potassium, vitamins A & C, antioxidants and fiber. This week it is featured on the stir fry bar and Seasonal Chicken with Asparagus. Visit Mick at the Green City Market on Wednesday and Saturday in Lincoln Park to purchase green and purple asparagus. Check out the recipe section on this website to attempt the dish at home.
